Purpose
Lincoln University Cooperative Extension Human Nutrition and Health Program (LUCEN) supports and coordinates with the Lincoln University Cooperative Extension (LUCE) nutrition and health educators, Lincoln University College of Agriculture, Environmental, and Human Sciences (LUCAEHS), and Lincoln University Expanded Food and Nutrition Education Programs (EFNEP) to develop, plan, implement, and evaluate nutrition and health programs and publications to improve the nutrition and health status of the critically underserved and minority populations throughout the state of Missouri.
Mission
The mission of the Lincoln University Cooperative Extension (human) Nutrition Program (LUCEN) exists to develop, coordinate, and implement high-impact, evidence-based educational programs in the areas of human nutrition and health. Programming and interventions are developed to serve the critically underserved and minority populations in the state of Missouri, working in partnership with local, state, and national agencies to increase health equity by increasing access to fruits, vegetables, and whole grains, thus increasing food security to help constituents live their healthier lives and improve health equity.

- Address eating behaviors, practical hands-on skill development related to shopping, fundamentals of good nutrition, and label reading
- Empower individuals to make personal lifestyle changes and encourage healthy choices of those around them.
- Bridge the gap between local access to healthy food choices to reduce hunger and support participation in local agriculture.
- Support student development and experiential learning opportunities to inspire students to choose vocations in science, nutrition, and population-health fields and empower positive change.
